Jen’s Clean and Healthy Egg Salad

I was in the mood for egg salad today, although mayo is not part of the ‘clean eating’ program.  So a little improvisation, a little creativity, and some patience, and my lunch today was delicious!

Jen’s Egg Salad Fix

  • 3 hard boiled eggs
  • 1/4 cup nonfat plain Greek yogurt
  • 1 tsp Dijon mustard
  • chopped onions
  • black pepper, to taste
  • whole grain bread (2)

After boiling the eggs, I peeled and mashed them.  Added all ingredients, mixed it together, and added it to a slice of whole grain bread.  Feel free to make a full sandwich, I was just in the mood for one slice today!
